6 7 • Place basket in cooking pot and press switch on handle to lower it into its resting position parallel to the front of the fryer (F). • Fill cooking pot to MIN (6 cups / 1.4 liters) or MAX (8 ½ cups/ 2 liters) with clean peanut, vegetable, canola or corn oil. d o not use olive, sunflower or flavored oils. • Close the lid on the fryer. • Plug unit into standard electrical outlet. Important: When the fryer is functioning, the oil gets extremely hot. Use caution at all times. Do not touch any of the metal parts, such as the basket or cooking pot once the appliance is heating. TO BEGIN COOKING 1. Select the desired cooking temperature by turning the temperature dial so that the point on the dial is directly at the desired temperature (G). Note: Use the frying guide on the front of the appliance and the charts and recipes found in the Use & Care as a guide to determine temperature and amounts of foods to be cooked in each batch. 2. The preheat indicator light will stay on until the selected temperature has been reached. 3. Raise the basket by lifting the handle so that it is parallel to the counter and clicks into place. 4. Allow the basket to drain several seconds. Press the lid release button to open the lid. 5. Fill basket with foods to be cooked. do not overfill. 6. Close the lid and lower the basket into the fryer by pressing the handle release button and lowering the handle into the vertical position until it locks into place flat along the front of the fryer. 7. Set the timer on the bottom right of the fryer (H). 8. The timer counts down in minutes until the last minute when it counts down the seconds. There is an audible signal for 8 seconds when timer reaches zero. Note: once timer has begun counting down, the time cannot be increased. To stop timer, hold down button several seconds until timer goes to zero. Set a new time. 9. If not turned off, the timer will repeat the audible signal once more before turning itself off. 10. To turn food during cooking, lift the basket, open the lid and carefully turn food using heat resistant tongs or slotted spoon. 8 9 11. When cooking is complete, with lid closed, raise the handle until it locks in place and let the food drain several seconds (J). Press the lid release button and open the lid. 12. Carefully remove the basket and turn the food out onto a paper towel lined plate to drain. 13. Replace the basket in the appliance. Close the lid and lower the basket. Allow the fryer to regain the set temperature (about 5 minutes) before frying another batch of food. 14. Repeat step 13 as necessary to cook additional food. 15. When cooking is complete, set the temperature dial to MIN and unplug the appliance. HELPFUL HINTS ABOUT YOUR FRYER 1. Preheat oil before first frying. Also, allow the oil to return to proper temperature before cooking another batch of food. 2. do not overfill the basket. Be sure the foods to be cooked are fully covered by the oil. 3. Season fried foods when they are still hot and fresh from the fryer. 4. Never overfill the fryer. There must be room for the hot oil to rise when food has been added. 5. If food is cooking too quickly on the outside before the center can be fully cooked: • Check the temperature of the oil with a deep frying thermometer and check the freshness of the oil. It may be time to discard oil and start fresh. • lower the temperature. 6. High heat, water and burnt food particles break down the oil. Always strain cooled used oil through a cheese cloth or paper towel lined strainer after each use. 7. To preserve the life of your oil, store used oil tightly sealed in a cool dark place between usages. on average, oil can be reused about 6 times before discarding. 8. oil should be discarded after frying if you notice: • extreme smoking at normal frying temperatures • Very darkened oil • Rancid smelling oil • excessive foaming around food being fried 9. dry foods fry best. dry foods with a paper towel. Make sure there are no ice crystals on frozen foods to be fried. 10. Make sure to remove excess batter before placing food in hot oil. 11. For better fresh French fries, soak cut potatoes in cold water for ½ hour before frying. drain well and dry thoroughly before frying. Fry in small batches and allow temperature of oil to recover before frying another batch. 13. Preheating the basket helps to prevent foods from sticking to the basket. Care and Cleaning This product contains no user serviceable parts. Refer service to qualified service personnel. Important: Always unplug the unit and allow it to cool completely before discarding the oil and cleaning. STORING OIL Note: You do not have to change the oil after each use. oil can be re-used until it gets dark or there is visible debris (such as batter or bits of food) in it. 1. Unplug unit from wall outlet. 2. Remove magnetic end of power cord from the unit socket. 3. Be sure the oil is completely cool before removing the cooking pot. 4. Store the cooled oil in its original container. CLEANING Lid 1. open the lid and pull straight up to remove it (K). 2. Wash the lid in warm soapy water using a sponge or nylon pad with liquid detergent. 3. Rinse, and dry thoroughly. 4. To reattach the lid, insert it straight down into the notches in the unit until it snaps in place. Important: Be sure the lid is securely in place. Cooking Pot and Frying Basket 1. Wash frying basket in the dishwasher, or wash by hand with a non-abrasive liquid cleanser using a nylon pad to remove any remaining oil. 2. Wash cooking pot by hand with a non-abrasive liquid cleanser using a sponge or nylon pad to remove remaining oil. • do not use any abrasive cleaners, coarse cleansers, or metal pads as they may damage the nonstick coated surface. • Be careful not to bang the pot as any dents can affect future performance. 3. After washing, dry the cooking pot, frying basket and handle thoroughly. Note: over time and repeated use, there may be some fat buildup in the pot and on the basket. This is normal. 12 1 FRIED CHICKEN LITTLES WITH FRESH LIME SAUCE ½ cup mayonnaise 2 tbsp. fresh lime juice 1 tbsp. minced green onion 1 tbsp. minced garlic 1 tsp. chili powder ½ tsp. paprika 1 tsp. salt ¼ tsp. coarse ground pepper 1 cup all-purpose flour ¼ cup self-rising flour ¼ tsp. baking powder 1 egg ¾ cup water 12 chicken wings, wing tip removed and remaining pieces separated at joint In bowl, combine mayonnaise and lime juice; stir until well blended. Stir in green onion, garlic, chili powder, paprika, ½ tsp. salt, and pepper. Cover and set aside until ready to serve. Add oil to “Maximum” fill in Black & d ecker ® deep Fryer; heat to 350° F. d o not use basket. Meanwhile, in medium size mixing bowl, combine ¾ cup all-purpose flour, self rising flour, remaining ½ tsp. salt, baking powder, egg and water. RECIPES CORN FRITTERS 1 cup all-purpose flour 1 tsp. baking powder 1 tsp. salt ¼ tsp. pepper 2 eggs ½ cup milk 1 tsp. olive oil 1½ cups whole kernel corn ¼ cup minced green onions 2 tbsp. chopped parsley Add oil to “Maximum” fill in Black & d ecker® deep Fryer; heat to 350° F. Meanwhile, in medium size mixing bowl, combine first 4 ingredients. In second bowl, combine egg, milk and oil; blend well. Stir in corn, green onions and parsley. Make a well in the center of the flour mixture; add the egg mixture all at once. Blend just until moistened. d rop by tablespoons into hot oil. do not crowd the fryer; cook about 6 at a time. Fry until golden brown on all sides and cooked through, about 4 minutes. d rain on paper towels. If desired, serve with maple syrup. This is a delicious accompaniment to broiled fish or chicken. Makes about 2½ dozen. Note: For ease, use a small ice cream scoop to make hush puppies. dip the bowl of the scoop into the oil before scooping the dough. The dough will not stick to the scoop.

(10 oz.) frozen chopped spinach, defrosted and well drained 3 oz. proscuitto, finely diced ½ cup shredded Fontina cheese ½ cup shredded Mozzarella cheese ½ cup grated Parmesan cheese ¼ cup chopped parsley 2 large cloves garlic, minced ½ tsp. salt ¼ tsp. pepper 48 wonton wrappers Marinara sauce Add oil to “Maximum” fill in Black & d ecker® deep Fryer; heat to 375° F. Meanwhile, in mixing bowl, combine next 9 ingredients; blend well. Place 5 wrappers on a cutting board. Brush the edges of 2 adjacent sides of the wrapper with water. Place about 1 tbsp. filling in center of wrapper. Fold in half forming a triangle and having 2 dry sides close on wet sides. Pinch to seal. Place closed wontons in fryer basket and lower into hot oil. Fry until golden brown on both sides and cooked through, about 5 minutes. d rain on paper towels. Keep warm. Repeat with remaining wontons. Heat marinara sauce. Serve with wontons. Makes about 8 to 12 servings.NEED HELP?
