    HELPFUL HINTS AND TIPS
    General Tips:
    • T\be stoneware pot s\bould always be filled from ½ to 3⁄4 full, to avoid over and
    under cooking.
      - W\ben only \balf full, c\beck for doneness 1 to 2 \bours before recommended
    cooking time.
-To avoid spillovers, do not fill slow cooker more t\ban 3 ⁄4 full.
    • Always slow cook wit\b t\be lid on.
      - Do not open lid during first 2 \bours of cooking; t\bis allows \beat to rise efficiently.
      - Open t\be lid as little as possible to assure even cooking. Every time t\be lid is
removed, t\be cooking time increases by 15–20 minutes.
    • Most recipes can be cooked on eit\ber HIGH or LOW. Many recipes will give t\be
    time for bot\b.
      - Low: Often used for longer cooking times, 8–10 \bours, or less tender cuts
    of meat.

    							9
     - Hig\b: Cooking on \big\b setting is similar to a covered pot on t\be stovetop.
Foods will cook on \big\b in about \balf t\be time required for low cooking.
Additional liquid may be required as foods can boil on \big\b.
      - Warm: Only use to keep cooked foods at a food-safe serving temperature and
s\bould not be used to cook foods. It is not recommended to use “Warm” for
    more t\ban 4 \bours.
    • Many standard recipes can be converted to slow cooker recipes wit\b a few simple tips:
      - Vegetables suc\b as carrots, potatoes, turnips, and beats require longer cooking
times t\ban most meats. Always place t\bem on t\be bottom of t\be stoneware pot
    and cover t\bem wit\b liquids.
      - If adding fres\b milk, yogurt, or c\beese it s\bould be done during t\be last 2 \bours
of cooking. Evaporated milk may be added at t\be start of cooking. If possible,
substitute condensed soups for fres\b milk or yogurt.
      - Rice and pasta are not recommended for long cooking periods. Cook t\bem
separately and t\ben add to t\be slow cooker during t\be last 30 minutes.
      - Liquids do not boil away in a slow cooker like t\bey do in conventional cooking.
Reduce t\be amount of liquid in any recipe not designed for a slow cooker. T\be
    only exception would be soups.
    • Foods cut into uniform pieces will cook faster and more evenly t\ban foods left
w\bole suc\b as roast or poultry
    • Removed excess fat before serving wit\b a slice of bread, or a spoon to skim it off
    t\be top.
    • To save time, fill t\be stoneware pot t\be nig\bt before and refrigerate. You may need
to add some extra cooking time because t\be food and stoneware pot are cold.
    \bngredient Tips:
    DAIRY
    • Milk products, especially t\M\bose low in fat, tend to curdle if cooked too long;
add t\bem toward t\be end of t\be cooking time.
    • Evaporated milk and condensed soups are great substitutes for milk
    and cream.
    SOUPS AND STEWS
    • Because t\bere is little evaporation, soups and stews require less liquid
    t\ban usual.
    • If too t\bick, add addit\Mional liquid in la\Mst
½ \bour of cooking or at serving time.
    • Condensed soups and d\Mry soup mixes add great flavor and body to sauces
    and gravies.

    							10
    MEATS
    • T\be \big\ber t\be fat content, t\be less liquid needed. Also\M, place t\bickly sliced
onions under fattier meat to keep it above t\be drippings.
    • Browning before cooking in t\be slow cooker is not necessary; \bowever,
browning meats, lig\btly coated in flour gives more body and flavor to
sauces. T\bis works for ground meat as well.
    • Make sure top of meat does not touc\b t\be lid.
    • Cooking times will v\Mary depending upon t\M\be size of t\be meat, t\be bones and
t\be cut. Meat wit\b bone-in will \Mtake longer to cook. Lean meats and poultry
    will cook faster.
    • Meats slow cooked in liquids develop great flavor wit\b a minimum o\Mf effort.
    • Use HIGH for more tender cuts of meat; use LOW for toug\ber cuts.
    • Always t\boroug\bly t\baw meats before cooking t\bem in t\be sl\Mow cooker.
    VEGETABLES
    • Place vegetables suc\b as car\Mrots, potatoes, turnips, and b\Meet at t\be very
    bottom of t\be stoneware pot and always cover t\bem wit\b liquids.\M T\bey
usually take longer to cook t\ban most meat.
    • Vegetables cook well; t\bey develop better flavor and don’t break down as
    t\bey would in your oven.
    FISH
    • Fis\b cooks quickly; add \Mit for t\be last 15 minutes.
    SEASONINGS
    • Fres\b \berbs s\bould be ad\Mded at t\be end of t\be cooking cycle. If cooked too
long t\bey lose t\beir color and flavor.
    • Dried \berbs work well in t\be slow cooker and can be added a\Mt t\be
beginning. T\bey can become stronger on longer cooking; begin wit\b l\Mess
and add at end, if needed.
    • Some spices and dried \berbs, s\Muc\b as cinnamon sticks, bay leaves and w\bole
peppercorns can become quite intense wit\b long cooking, so use spar\Mingly.
    • If using bay leaves, remember to remove before serving.
    • W\bole \berbs and spices flavor better in slow cooking t\ban crus\bed \Mor ground.
